Include balance date in balance request

SimpleFIN includes a date in their response that corresponds to the date in which the balance was last updated on their end.

This is helpful for the app consuming the API to know whether a balance is stale and the bank connection needs to be fixed.

Is it possible for Lunch Flow to include this info in the balance response?
